Sweet Potato Bites

Preheat oven to 350 degrees
This is a "sweet" treat that they really love! Watch out for "Counter Surfers"!

  • 2 1/2 cups boiled mashed sweet potato
  • 2 eggs
  • 1/2 tsp salt
  • 1 tsp yeast
  • 1/2 tsp cinnamon
  • 1 tsp vanilla
  • 1 cup oatmeal
    you know, the whole-grain you cook into breakfast cereal? I haven't tried this with instant oatmeal - it might work.
  • 8 cups flour
    I used whole wheat
  • 1/4 cup carob powder - optional

All I did was scrub the sweet potato, (Yes, that was one large sweet potato!), chunk it up and simmer til tender. I let it drain in a colander until it was cool enough to work with. I mixed all of this up in a stand mixer. When it's ready to roll out, it should be like a bread dough - springy and easy to work with. If it's sticky, work more flour in. (Kneading bread dough is actually sorta satisfying. Work some agression out on it!) The sweet potato adds a lot of moisture. That's why it takes so much flour

You can make this into bite-sized treats two ways:

I rolled it out on a cloth to about 1/4 to 1/2 inch thick and used a pizza cutter to cut 1/2 inch strips and then 1/2 inch strips crosswise. Don't bother oiling the baking sheet. The treats slip right off.

I scoop the pieces up from the cloth with a spatula and transfer them to my baking sheet without breaking them apart. I even bake them that way.

Bake for 30 minutes give or take a few minutes. They'll be brown with a slightly soft center. They harden up while cooling. After baking, I let them cool a little and then break them up and put them on a paper plate to finish cooling.

Storing I store them in an open container to prevent mold. If they're going to be around your house for a while, you might want to put them in the fridge. I've never had any mold, but they're never here that long. If you find your pup doesn't eat that many treats, (we have 6, so we really go through them), halve the recipe.
